It rained all day yesterday. It was lovely! We’ve been waiting for the cool weather. It was a definite Potato Soup day! And here’s our recipe … So! Good!
Potato Soup
Ingredients:
10 medium potatoes
1 – 2 onions, thinly sliced
1/4 butter
4 cups heavy cream
2 cups whole milk
1 tablespoon salt
Optional but “Oh so good!”
1 cup grated cheese
4 green onions finely sliced
1 pound bacon, fried crisp, drained and crumbled
Peel (or not) and quarter potatoes. Bring potatoes to a boil in large pot of water. Cook 30 minutes until tender.
Place sliced onions and butter in a skillet and saute on low heat for 30 minutes or until tender and lightly browned.
Remove potatoes from heat and drain. Place the potatoes back in the pot, add the heavy cream and mash. I mash them well however leave chunks too.
Stir in the milk and salt. Add onions and butter. Simmer over low heat (carefully as to not scorch) to preferred consistency.
Serve alone or with the sides of grated cheese, green onions and bacon.
