NY is addicted to Texas Sheet Cake.
It serves a crowd, is moist, chocolatey and quick and easy to make. Everything we want in a yummy dessert. This recipe comes to me from my dear friend Mary, by way of her daughter Carrie. Don’t you just love recipes like that?
Texas Sheet Cake
CAKE
1 cup butter
1 cup water
4 heaping tablespoons unsweetened cocoa
2 cups sugar
2 cups flour
1/4 teaspoons salt
½ cup buttermilk (or cup milk mixed with 1 tablespoon vinegar)
2 eggs
1 teaspoon baking soda
1 teaspoon pure vanilla extract
FROSTING
1 cup + 1/3 cup + 2 tablespoons melted butter
4 heaping tablespoons unsweetened cocoa
1/4 cup + 2 tablespoons milk
4 1/2 cups powdered sugar
1 teaspoon vanilla
In a small saucepan bring the 1 cup butter, 1 cup water and 4 heaping tablespoons cocoa to a boil stirring constantly. While bringing to a boil …
… measure the 2 cups flour, 2 cups sugar, 1 teaspoons baking soda and 1/4 teaspoon salt into a mixing bowl.
Add two eggs and mix well.
Add the “hot” chocolate mixture and the …
… 1/2 cup buttermilk and 1 teaspoon vanilla. Mix well.
Pour immediately into a greased cake roll pan. (since we didn’t need the large cake I halved the recipe in these photos and baked in a 13 x 9 inch pan)
Bake at 350 degrees for 20 minutes or until a pick comes out clean.
While the cake is baking make the frosting by bringing the 1 cup + 1/3 cup + 2 tablespoons butter, 4 heaping tablespoons unsweetened cocoa and 1/4 cup + 2 tablespoons milk to a boil in a small sauce pan. I use the same sauce pan I used for the cake.
Pour hot mixture into a mixing bowl and add 4 1/2 cups powdered sugar and 1 teaspoon vanilla. Beat until creamy.
Remove cake from oven.
Immediately spread frosting over the hot cake.
Let the cake cool a bit but not for too long … this cake is heavenly eaten warm with vanilla ice cream!!

I have made this cake many times. It was all the rage in the 80’s here in Arkansas. It may even date back to the late 70’s. It is wonderful, easy, and your family and friends will love it. If you don’t have a jellyroll pan, get one just to bake this cake! It’s still my favorite cake.
