We love this Mini Cheesecakes recipe! Our boys do too. They eat them like cookies.
They’re perfect for parties and the fresh berries add an elegant touch and taste!
Cheese Cake:
3 – 8 ounce packages of softened cream cheese (do not use low or non fat)
1 cup white sugar
5 eggs
1/2 teaspoon real vanilla
Topping:
1 cup sour cream
1/2 cup sugar
1/2 teaspoon real vanilla
Fresh berries of choice
1. Add 3 – 8 ounce packages of softened cream cheese (do not use low or non fat) and 1 cup sugar together in a large bowl. Mix until well blended and creamy.
2. Mix in 5 eggs until well blended.
3. Add 1/2 teaspoon real vanilla.
4. Beat well until creamy and a bit fluffy.
5. Spoon into papered cupcake pans. (I used mini cupcake pans with a few regular size cupcakes on the side)
6. Bake in a preheated oven at 300 degrees for 40 – 45 minutes. (remove the mini cupcake pan at 30 – 35 minutes)
7. Prepare the topping while the cheese cakes are baking.
Beat together 1 cup sour cream, 1/2 cup sugar and 1/2 teaspoon real vanilla.
8. Spoon a dollop of the topping mixture on each little cheese cake. Bake another 5-7 minutes.
9. Let the cheese cakes cool then top with fresh berries. These are the mini cupcake cheese cakes with one berry each. Use three berries for each of the regular cupcake size cheese cakes.
