We eat a lot of fresh veggies at our house. Our favorite way to cook said veggies is by sauteing them in coconut oil.
Our favorite coconut oil is from Trader Joe’s. The scent and taste is a bit stronger than others we’ve tried.
Sauteed Fresh Vegetables
Ingredients:
Fresh vegetables – We use every vegetable imaginable but this time we used red potatoes, cauliflower, broccoli and brussel sprouts.
1 – 2 cloves garlic – pressed
Coconut oil
1. Add 1-2 tablespoons of coconut oil to your skillet. When the coconut oil has melted add the chopped vegetables and pressed garlic cloves.
2. Saute until the vegetables are cooked through stirring often. The cooking time depends on the tenderness and crispness you like. I’ve discovered that coconut oil cooks a bit hotter than olive oil.

Grilled Salmon with Lemon Butter Sauce
Ingredients:
Salmon
1/2 cup butter
Juice from one lemon
1 clove garlic – pressed
1. Melt butter is medium sauce pan. Add the juice from one lemon and 1 pressed garlic clove. Mix well
2. Brush a bunch (or almost half) of the Lemon Butter sauce onto a hot grill and add the Salmon Steak. Now brush the remainder of the Lemon Butter sauce on top of the steak. cook until done but don’t overcook or burn it. I used my George Foreman grill. I used the flat setting so the sauce wouldn’t spill off the grill. As the salmon cooked I changed to the slanted setting.
And there you have it! Fresh sauteed veggies with mouthwatering grilled salmon. We added brown rice and some fresh fruit. We filled our bellies and sat back with smiles on our faces.
