There’s nothing on the planet like a good lasagna. It’s one of my all time favorite meals! I’ve been using the same recipe for over 35 years and it’s never failed me. But I always seem to add something different though, depending on my mood.
Lasagna is great for taking to a potluck dinner or for taking to someone in need of a home cooked meal. This recipe is also easy to double. I like to freeze a pan of it to use at a later time.
Ingredients:
1 pound ground meat of choice
1 onion sliced
1 1/2 teaspoons sea salt
pepper and seasonings of choice
1 16 ounce can of tomatoes or stewed tomatoes
2 6 ounce cans of tomato paste
1 cup water
1 tablespoon finely chopped basil
1 clove garlic, minced
10 ounces lasagna noodles
1 tablespoon coconut oil
2 eggs
3 cups ricotta or cottage cheese
1/2 Romano or Parmesan cheese
2 tablespoons dried parsley flakes
1 16 ounce package of mozzarella cheese
Brown 1 pound of Italian sausage or ground meat of choice with 1 sliced onion. Add salt, pepper and seasonings of choice to preferred taste.
Slightly puree 1 16 ounce can of tomatoes or stewed tomatoes.
You can also use a potato masher instead of a food processor.
In large pot, mix the pureed tomatoes with 2 6 ounce cans of tomato paste, 1 cup water, 1 tablespoon crushed dried basil (I rub the basil between the palms of my hands and let it fall into the sauce) and 1 clove minced garlic. Simmer for 15 minutes stirring occasionally to prevent burning.
Bring a pot of water to a rolling boil. Add 1 tablespoon olive oil and a few dashes of sea salt. Add 6 – 8 lasagna noodles and cook as directed on the pasta box.
After cooking, drain the lasagna noodles and set aside.
Beat 2 eggs and add 3 cups ricotta or cottage cheese. Fold together.
Add 1/2 Romano or Parmesan cheese and 2 tablespoons dried parsley flakes. Mix together gently and set aside.
Grate or slice (whichever you prefer) 16 ounces of mozzarella cheese. Set aside.
Okay! Let’s put the lasagna together!
Add a layer of sauce to a 12 x 13 inch pan.
Now add a layer of the lasagna noodles.
And a layer of the cheese mixture.
And a layer of mozzarella.
Add another layer of sauce.
And another layer on lasagna noodles.
Add the last of the cheese mixture.
And the last of the mozzarella.
Top with another layer of tomato sauce. Bake at 375 degrees for 30 minutes. Let the lasagna stand for 10 minutes after removing from oven.
