We have a bowl of granola almost every day. Usually for breakfast but quite often in between meals too. I prefer my granola with fresh blueberries and unsweetened almond milk while NY prefers his with whole milk and bananas. But Homemade Vanilla Almond Granola is delightful by the handful too!
Our favorite granola is Vanilla Almond. And since we’re trying to simplify our diet by removing preservatives, we decided to make our own. The recipe is quick and basic leaving plenty of room for adding your own favorite ingredients. The options are endless!
Ingredients:
6 cups old fashioned rolled oats
1 cup sliced almonds (we purchase our sliced almonds in bulk from our local organic market)
1/2 cup almond flour (we purchase ours in bulk from our local organic market)
1/2 cup wheat germ
1/2 cup shredded coconut
1/4 cup freshly ground flax seed
1/2 cup coconut oil (melted to liquid form)
3/4 cup honey (we use local honey heated to a runny consistency)
2 teaspoons pure vanilla extract
2 teaspoon pure almond extract
Directions:
- Preheat oven to 300 degrees.
- Mix 6 cups rolled oats, 1 cup sliced almonds, 1/2 cup almond flour, 1/2 cup wheat germ, 1/2 cup coconut and 1/4 cup freshly ground flax seed together in a very large bowl. Mix together.
- Stir together 1/2 cup liquid coconut oil, 3/4 cup warm honey 2 teaspoons vanilla extract and 2 teaspoons almond extract.
- Stir liquid while pouring over the oats. Stir until mixed thoroughly.
- Cover a large baking sheet (with sides) with parchment paper. I use a half sheet cake size. Spread the granola mixture evenly over the entire baking sheet.
- Bake at 300 degrees for 10 minutes. Remove the granola from the oven and gently stir the mixture. Return to oven and bake for an additional 10 minutes. Gently stir the granola and bake an additional 5 minutes watching carefully!
- Remove from oven. Carefully remove parchment paper and granola from baking sheet. The granola will crisp as it cools.

I just made another batch. My food processor broke so I was unable to slice my almonds. I was also out of almond flour and didn’t want to take the time to make make more. So I took a couple handfuls of almonds and put them in the Magic Bullet. I shook the bullet as it was grinding which made chunky almond granuals. Ha! The granola is cooling now. Take this recipe and make it work for you. Next week I’m going to use coconut oil and perhaps flax seed. 😉
