I’ve been using a well-known brand of bread crumbs for over 25 years. My mother used the same brand before me. I’m sure that’s why I was still buying it. At least until recently. In our effort to take preservatives and chemicals out of our diet, I decided it was time to make my own bread crumbs. Believe it or not, it’s something I’ve never done before unless it was for an individual recipe.
Ingredients:
12 slices of bread – I used odds and ends that I had in the fridge. White, Wheat and Squaw. The variety actually gave the crumbs color and extra taste.
1/2 cup fresh shredded Parmesan cheese
1 teaspoon onion powder
1 teaspoon garlic powder
2 teaspoons basil
Add whatever seasoning you want or leave them plain.
Directions:
1. Toast 12 bread slices and cut into small pieces or cubes.
2. Using a food processor, pulse the bread cubes along with the Parmesan cheese to a crumb consistency. I chose to use our mini processor. It simply worked better since my food processor isn’t working well. I was able to process approximately one slice of bead at a time with a few tablespoons of Parmesan.
3. Mix all the bread crumbs together in a large bowl. Add 1 teaspoon onion powder, 1 teaspoon garlic powder and 2 teaspoons basil. This is where you can make the bread crumbs taste exactly how you like them. Add whatever seasoning you want or leave them plain.
4. After the crumbs are mixed together with the seasoning, spread them evenly out on parchment paper until they are completely dry. I covered them with a lightweight tea towel and let them set overnight.
5. Scoop the bread crumbs into a container for storage.
I chose to store mine in a sealable food storage bag that I label with the date. Store in the freezer and enjoy!!
