While NY appreciates a large juicy rib-eye steak, I’ve pretty much given up on eating beef, pork or poultry. As of late I’ve been trying to broaden our seafood palette. Last week I baked scallops with Parmesan bread crumbs. NY had his scallops over brown rice while I went with spaghetti squash.
Both were delicious! And while I’m not afraid of complicated recipes, I do favor the quick and easy.
Ingredients:
1/4 cup butter
1 1/2 pounds scallops (I used frozen scallops. NOT imitation)
1/2 cup seasoned bread crumbs
1 teaspoon garlic powder
1/2 teaspoon paprika
1 teaspoon onion powder
1 teaspoon fresh parsley
2 cloves garlic
1/2 cup grated Parmesan cheese
1. Preheat oven to 400 degrees.
2. Rinse and drain 1 1/2 pounds scallops, set aside.
3. Use a garlic press to mince 2 garlic cloves and set aside.
4. Melt 1/4 cup butter and pour into an 8 inch by 8 inch casserole dish. Add scallops.
5. In large bowl combine 1/2 cups seasoned bread crumbs, 1 teaspoon garlic powder, 1/2 teaspoon paprika, 1 teaspoon onion powder, 1 teaspoon fresh parsley, pressed garlic and 1/2 cup grated Parmesan cheese. Mix until well blended.
6. Bake at 400 degrees for 15 – 20 minutes.
