A few years ago we shared our favorite granola recipe. We still enjoy granola for breakfast most every day but there have been a few changes in our my diet. I’m now gluten-free and almost completely vegan. So, with a little tweak here and another there, we now have a new granola recipe. Here’s to Gluten Free Vanilla Almond Granola!
6 cups gluten-free old-fashioned rolled oats
1 cup sliced almonds
1/2 cup almond flour
1/2 cup shredded coconut
1/4 cup freshly ground flax seed
1/2 cup coconut oil, melted to liquid form
3/4 cup raw honey, heated to a runny consistency (we use local honey straight from the beekeeper)
2 teaspoons organic vanilla extract
2 teaspoon organic almond extract
Directions:
1. Preheat oven to 300 degrees.
2. Mix gluten-free rolled oats, sliced almonds, almond flour, coconut and ground flax seeds together in a very large bowl. Mix together.
3. Stir together liquid coconut oil, warm honey, vanilla extract and almond extract.
4. Stir liquid while pouring over the dry mixture. Carefully stir until all ingredients are thouroughly mixed.
5. Cover a large baking sheet (with sides) with parchment paper. I use a half sheet cake size. Spread the granola mixture evenly over the entire baking sheet.
6. Bake at 300 degrees for 10 minutes. Remove the granola from the oven and gently stir the mixture. Return to oven and bake for an additional 10 minutes. Gently stir the granola and bake an additional 6-8 minutes watching carefully.
7. Remove from oven stirring occasionally while the granola cools.
