Finding a great pancake recipe that’s both vegan and gluten-free is near impossible. But I’m here to tell you … we found one! Made without oil and eggs, this recipe is absolutely delicious. Since going 100% plant-based, I’ve even been able to introduce gluten back into my diet. Made with 100% whole wheat flour, gluten-free flour or regular flour, this recipe is delicious and no-fail.
Ingredients:
- 1 1/4 cups flour – 100% whole wheat or gluten-free
- 2 tablespoons corn meal
- 2 tablespoons buckwheat flour
- 1/4 cup rolled oats
- 1 tablespoon baking powder – I use aluminum-free baking powder
- 1/2 teaspoon sea salt
- 1/2 teaspoon ground cinnamon – I grind mine fresh
- 1/8 teaspoon ground nutmeg – I grind mine fresh
- 1 3/4 cups plant milk – we use original unflavored almond milk
- 1/2 cup organic unsweetened apple sauce
- 2 tablespoons pure maple syrup
- Fresh berries for garnish
- Pure maple syrup
- Do not use an electric mixer. Use a large bowl, wooden spoon and/or whisk.
- In large bowl, whisk together flour, cornmeal, oats, baking powder, sea salt, cinnamon and nutmeg.
- Add plant based milk, apple sauce and maple syrup.
- Using a large spoon, fold all the ingredients together but don’t over mix.
- Heat griddle or pan to 325 degrees.
- Pour 1/3 cup batter for each pancake onto hot griddle.
- Cook 2 – 3 minutes on each side being careful to not burn.
- Serve immediately or place in warm oven to keep warm
- Serve with warm maple syrup and garnish with fresh berries
