It’s that time of year when our homes are filled with the scent of deliciousness coming from the kitchen. Warm spices and apples mixed with caramel is on the menu today. You can make this recipe for, vegan caramel apple hand pies, vegan as we do or mix it up with all your favorite ingredients. That’s the beauty of making recipes from scratch, you can add a little more of this and a little less of that and make it all your own.
Mini Caramel Apple Hand Pies
Makes: 12 pies (6 pies from each roll)
Ingredients:
- 1 ready made recipe or box of Refrigerated Pie Crust (2 rolls)
- 1 cup of Granny Smith Apple, peeled and diced into small cubes (about 1 large apple)
- 2 tablespoon of All-purpose Flour
- 1 teaspoon of Cinnamon
- OR 1 teaspoon Pumpkin Pie Spice
- ¼ cup of Organic Brown Sugar
- ¼ cup of Caramel Bites – optional or use vegan caramel
- Juice of half a lemon
- 2 tablespoons of melted Coconut Oil
Directions:
- Preheat the oven to 450 F. Line a baking sheet with parchment paper or Silpat. Keep aside.
- In a bowl, combine the diced apples, lemon juice, cinnamon, brown sugar and flour. Mix until apples are completely coated. Set aside.
- Unroll the pie dough onto a well-floured surface. Using a 3-inch circular cookie cutter, cut out as many circles as possible. Using a rolling-pin, roll out the scraps and continue to cut out circles until you run out of dough. I got 12 circles from 1 pie dough. Repeat the same with the other pie dough.
- Spoon 1 tablespoon of the apple filling into the center of half of the pie circles. Make sure to leave enough of a border around the filling to seal them shut. Do not overfill!
- Top the apple filling with a few pieces of caramel bites.
- Brush around the edges of the dough with a finger dipped in melted oil. This will be the “glue”.
- Place a second dough circle on top each filled circle. Then use a fork to crimp the edges together.
- Brush each pie with melted coconut oil, and cut an ’X’ sign on the top of each pie with a sharp knife.
- Refrigerate for 30 minutes.
- Bake the pies for 15 minutes, or until they’re golden brown.
