Most everything we make in our kitchen is made from scratch. But we’re not opposed to quick and easy hacks. That’s why we’re big fans of this easy peasy and oh so delicious Boysenberry Chocolate Dipped Cookies recipe.
Seriously! It doesn’t get much easier than dipping Knott’s Boysenberry Tea Cookies into a melted Boysenberry Chocolate bar. It’s that easy! Just follow our step by step tutorial.
It’s a fast and easy party treat (think Easter, Valentine’s Day, Christmas, etc.). And a delicious addition to any potluck dinner/picnic. Also a sweet treat for a new neighbor, a friend, or a simple ‘thinking of you’ gift.
Ingredients:
18 ounce tub of Knott’s Berry Farm Boysenberry Tea Cookies
1 Knott’s Berry Farm Boysenberry Chocolate bar
1 cup semi-sweet chocolate chips
Directions:
- Place the Boysenberry Chocolate bar and the semi-sweet chocolate chips in a double boiler.
- Using a medium heat, melt the Boysenberry Chocolate bar and semi-sweet chocolate chips stirring until completely creamy. If necessary, add a teaspoon or so of coconut oil for a good consistency.
- Don’t have a double boiler? You can melt your chocolate in the microwave, but be sure to stir it every 25 seconds, or until it can melt on its own heat. But … chocolate in the microwave can burn quickly.
- Don’t leave your chocolate alone while heating/melting. Watch it carefully!
- Carefully dip half of each Boysenberry Tea Cookie in the melted chocolate. Let the excess chocolate drip off.
- Set the dipped cookies on parchment paper or on a baking/cookie rack for the chocolate to dry and set.
