I’ve been making Toffee Bars for Christmas for 36 years. I’ve been eating them for as long as I can remember. Probably since I was dinky and able to eat solid foods. My mother made them every year for Christmas. It was and still is a family tradition.
Toffee Bars are easy to make and oh so good!
What you’ll need:
1 cup butter
1 cup brown sugar
1 egg yolk
1 teaspoon pure vanilla
2 cups flour
1/4 teaspoon salt
2 or 3 large chocolate bars – unwrapped a broken into pieces
Optional – 1/2 cup chopped pecans which is my preference. My mother used chopped walnuts.
Deep cookie sheet or 9 x 13 inch baking pan
Preheat oven to 350 degrees
Mix together 1 cup butter and 1 cup brown sugar until creamy.
Add 1 teaspoon pure vanilla,
and 1 egg yolk. Mix until well blended and creamy.
Add 2 cups flour and 1/4 teaspoon salt. Mix until well blended. The mixture will be clumpy like cookie dough.
Press dough into deep cookie sheet or 9×13 inch baking pan.
Bake in a 350 degree pre-heated oven for 20 to 25 minutes. (Less baking time is required for the deep cookie sheet. check after 15 minutes) Top will be lightly browned but soft to the touch.
Immediately place chocolate bar pieces on baked toffee bars.
Using a knife or spatula, spread the chocolate over the toffee bars as it melts.
Be sure to cover completely while trying to keep the chocolate evenly spread.
Sprinkle with chopped pecans. (optional) After the chocolate has cooled and set (I sometimes place the pan in the fridge or freezer for a few minutes) cut into squares and Enjoy!
