Easter pretty much ‘snuck’ up on me this year. Even though we put our Easter decorations out a few weeks ago, I was still thinking the special day was still several weeks away. While we celebrate the resurrection of our Savior Jesus Christ on Easter, we also like to color eggs, hide baskets of candy, and gather our family around for good food and festivities.
Our favorite eggs are farm fresh Eggland’s Best . We always try to buy healthy organic food products and Eggland’s Best is just that. Eggland’s Best hens are vegetarian fed. I like that. Especially since I’m (but not NY) a bit of a vegetarian. Because I rarely eat meat I reply on eggs for protein in my diet. And one Eggland’s Best egg provides me with 13% of my daily recommended protein.

While planning a recent brunch we realized that eggs are in almost everything we make from scratch. We wanted to serve delicious healthy dishes that everyone would enjoy. We wanted a spring theme with a focus on the upcoming Easter celebration.
We used NY’s ‘Franciscan Desert Rose’ dinnerware from his mother. Aren’t they gorgeous? Perfect for Easter and Spring!
Everyone loved the Broccoli & Cheddar Frittata from the Eggland’s Best website. I substituted herbed feta cheese for the cheddar. We were delighted with the recipe and look forward to trying some of the other variations.
The wonderful thing about Deviled Eggs is the egg salad sandwiches you make with the left overs. If there are any leftovers. Once again, it’s easy to put your own spin on deviled egg recipes. We went with a classic recipe.
Our Lemon Poppy & Chia Seed Muffins with a tart Lemon Glaze gave our brunch the perfect sweet touch. I choose to peel the muffin wrappers off before drizzling the glaze.
