We eat fresh fruit and vegetables at home everyday. Be it in a smoothie, or on granola, or in a salad, or on rice or a tortilla. We love our fruit and vegetables for breakfast, lunch, and dinner. And we rely on produce being fresh for a big part of our nutrition. We’ve chosen to eat vegan (99.9%) and therefore have eliminated all meats and dairy products from our diet. And we like it that way. One of our favorite at-home meals are quick and easy fresh veggie wraps.
The wraps are very simple to make and with practically no preparation. We love to load the wraps with spinach because of its nutritional value and low calories. Each of our wraps has 1 cup of spinach. That’s less than 7 calories, but with high levels of vitamins A, C, calcium, folate, iron and zinc. How impressive is that? And this Southern California girl learned a noteworthy fact: California produces 2/3 of the United States’ spinach. As a result of being gown closer, our spinach is that much fresher!
Where do we buy our fruits and vegetables? That’s an easy answer: Sam’s Club. We can buy in bulk and therefore save big time. We buy 2-3 times the amount for the same price or less than we do shopping most every place else. And what’s not to like about that? We’re eating out less and less these days so it’s important to have food we enjoy on hand at home. I think one of the reasons our grandchildren enjoy eating at our house is because they know how important family meals are. We gather around the table, eat good food, and talk about what’s happening in their lives.
Sam’s Club can be your one-stop shopping spot for just about everything, too, including your health needs. Several select Sam’s Clubs even offers free health screenings on the second Saturday of every month. That’s right, free health screenings! How cool is that? The next free health screenings are on August 13th. You can also have all your optical and hearing needs met at Sam’s Club too.
We’ve been reading the Healthy Living Made Simple online magazine from Sam’s Club. It’s easy to access, especially while on the go. It’s easy to see that Sam’s Club cares about their members and their members’ health. Healthy Living Made Simple has articles for everyone. There are even healthy recipes. You’ll find spinach recipes, too. After all, spinach is the superfood for July and August. Superfood! Makes me feel a bit like a superhero. *wink
Our fresh veggie wraps are delicious and full of a variety of goodness. You can use our recipe as a guide and add some of your favorite veggies, too.
Fresh Veggie Wraps – makes 4 wraps
Ingredients:
- 4 cups fresh baby spinach
- 2 zucchini – thinly sliced lengthwise
- 1 small – medium onion – thinly sliced
- 2 – 3 medium tomatoes – sliced
- 1 avocado – sliced
- 2 sweet peppers – thinly sliced
- 4 whole wheat flour tortillas
- Hummus
Spinach is edible from stem to leaf so there’s no need to chop or trim. Simply wash it along with your other vegetables and you’re ready to go.
- Warm each tortilla over a flame or in the microwave.
- Layer the veggies starting with 1 cup spinach on half of the tortilla.
- Spread the other half of the tortilla with a generous helping of hummus.
- Carefully roll the tortilla, starting with the vegetable layered side.
That’s it! Serve with fresh fruit and enjoy! You can switch it up by using your favorite oil and vinegar dressing, salsa or whatever you’d like. Play with the recipe to make it a family favorite.
For a tasty twist you can also grill the veggies. But remember … while cooking, the spinach will reduce in size. That isn’t really an issue though. Just use two cups of spinach instead of one and get twice the nutrients. Win-win!

I make a similar wrap for lunch. I am not vegan though, so I add cheddar cheese and top with a bit of ranch dressing. I never thought of using zucchini!
