As our children grow, leave home and have busy lives of their own, it becomes more and more difficult to gather everyone together. My mom has been visiting for a week which was a great reason for all to gather for a delightful time. On Sunday evening we celebrated nothing in particular, yet everything. We set the table with the Christmas china and jumped at the opportunity to use our new gold chargers. The menu was delicious, yet simple to limit the time in the kitchen. We had chicken enchilada casserole, corn on the cob, steamed broccoli and a simple green salad. I was excited to set such a lovely table, although, as the photos show, last minute items such as the salsa and sour cream were tossed on the table with out serving bowls, and the milk and water were not served in our pretty pitchers. No one seemed to care though, as good food, good company and good conversation was had by all.

As soon as Austin & Cody hit the door at our house they strip down to their underwear. Tonight it was just down to their pajama bottoms. As I wondered if this was their new “thing” everywhere they went, their dad, Brian, said, “Hey! Where’s your clothes”? I don’t think there was a response, as both boys were deep in an intense battle with Nerf swords, plastic shields and gold tulle head wraps. (I think the gold tulle gave them magical power!!) Earlier, when they ran by me with the gold tulle they had discovered in the office draped over them as if they were ghosts, I suggested we tie it around their heads before they tripped on something. “Good idea grandma!!” (I love scoring “points” with the babies!)
After dinner we gathered in the family room for pineapple upside-down cake (my favorite cake). We watched a movie CD of Brian’s recent Alaskan fishing trip. Last summer he flew, with several close friends, to Kodiak Island. “The guys” had a great time fishing and getting up close and personal with big bears. Of course with Brian, there are always pranks involved; “boys will be boys”, or should I say…”men will be boys”!I’ve decided the following: halibut are truly odd looking fish, live, uncontained crabs belong in the ocean and not on a fishing boat, and whales, even though they are majestic and beautiful, are more “fun” to watch at Sea World than next to the boat you’re on. When I asked Brian if he was scared of the whale, (I know, a very stupid question to ask my boys!), Todd blurted out, “Mom! it’s not “Orca”!!! (Remember that movie?!?)Chicken Enchilada Casserole is an easy delicious meal. You won’t spend hours in the kitchen and it can also be made ahead of time.

Gluten Free Chicken Enchilada Casserole
4-5 boneless skinless organic chicken breasts
2 cartons Pacific condensed cream of chicken soup
1 can (4 oz) diced Green Chilies
1 bunch of Green Onions chopped
2 cups organic vegetable broth
1 ½ cups sour cream
2 cups grated cheddar cheese
18 gluten free corn tortillas torn or cut into two inch pieces
1. Mix together the soup, chilies, onion, pimentos, bouillon and sour cream.
2. Spread 1/3 of the tortillas on the bottom of a 9 X 13 inch greased pan.
3. Spread 1/3 of the chicken over the tortillas followed by 1/3 of the soup mixture.
4. Repeat this process 2 more times.
5. Spread grated cheese on top and bake at 350 degrees for 35 to 45 minutes until it’s hot and bubbly.
6. Remove from oven and place on a cooling rack.
7. Let it stand for 10 minutes before serving.
8. Serve with sour cream and salsa.
