A few weeks ago our oldest grandson celebrated his 12th birthday.
He placed a special order for a Red Velvet San Francisco 49ers birthday cake. I had never made a Red Velvet Cake before but I’m not one to disappoint our grandson and I’m always up for a good challenge. I say that because the red velvet cake recipe is easy … but it’s not as simple as dumping all the ingredients in a bowl and mixing them together. The results were fabulous and the birthday boy and his friends loved it!! There wasn’t even a crumb leftover.
Ingredients:
- 1/2 cup vegetable shortening
- 1 1/2 cups sugar
- 2 eggs
- 2 tablespoons cocoa powder
- 2 ounces red food coloring
- 2 1/2 cups cake flour
- 1 teaspoon salt
- 1 cup buttermilk
- 1 teaspoon vanilla extract
- 1 1/2 teaspoon baking soda
- 1 teaspoon vinegar
Mix together 1/2 cup vegetable shortening and 1 1/2 cups sugar.
Mix well.
Add 2 eggs.
Beat until fluffy.
In a medium size bowl add 2 tablespoon unsweetened cocoa powder to 2 ounces red food coloring.
Stir to a well mixed paste.
Add the cocoa/food coloring paste to shortening/sugar/egg mixture. Beat well.
Pour 1 cup buttermilk into a medium bowl. Add 1 teaspoon vanilla and …
1 teaspoon salt. Stir.
Add the buttermilk mixture alternating …
with 2 1/2 cups flour to the cake batter mixing well after each addition.
Beat well.
In a small bowl stir 1 1/2 teaspoons baking soda into 1 teaspoon white vinegar.
Add to cake batter and gently fold together.
Gently.
Pour cake batter into the greased and floured pan/pans. Bake at 350 degrees for 25 – 30 minutes or until a toothpick inserted into the center of the cake comes out clean. Do not over bake.
Let the cake cool completely. Frost and decorate as desired.

YUM YUM YUM! I will say that I’m still trying to figure out if there is a natural way to make red velvet cake without the dye…if you ever find out, please let me know : )

I know what you mean Caryn. I was totally surprised with the amount of red food coloring. I know there are recipes that use beets which I’m going to try. ;D
