Summer berries are a favorite at our house. Some time ago we shared our Red, White and Blue, Berry Shortcake recipe served in individual mason jars. It’s quick and easy to whip together. And while it’s still a hit at barbecues and parties, we wanted to tweak it to fit our now vegan lifestyle.

This recipe is over the top simple!
Ingredients:
- 2 cups fresh strawberries sliced
- 1 1/2 cups fresh blueberries
- 2 cups of your favorite vegan pound cake or sponge cake cut into bite size pieces.
- Vegan Coconut Whipped Cream (Quick and easy to make!!)
- 8 eight ounce Mason Jars OR 4 16 ounce Mason Jars
- Twine, Baker’s String or Ribbon
- Fill each mason jar approximately 1/3 full with sliced strawberries.
- Add a layer of cake.
- Add a layer of blueberries leaving room at the top for your whipped cream.
- Finish with a dollop of Vegan Coconut Whipped Cream
- Trace your lids onto our patriotic printable sheets. Red & White Stripes and Navy with Stars.
- Place the lid cover between the mason jar lid and ring and twist on the jar.
- Tie our 4th of July printable tags or Celebrate America printable tags on the jars with Twine, Baker’s String or Ribbon (affiliate links).
Now you’re ready to celebrate!
