French onion soup is a go to favorite of ours when we dine out. Now it’s one of our favorite soups to have at home too. I had no idea how easy french onion soup is to make. I had almost everything needed in my pantry. I just needed to purchase a small block of Gruyere cheese.
Ingredients:
4 tablespoons butter
2 pounds (4 – 5) large onions sliced
1 teaspoon sugar
1 tablespoon flour
4 cups beef stock
2 teaspoons chopped fresh thyme or 3/4 teaspoon dried thyme
salt and pepper
2 slices french or sourdough bread
8 ounces grated Gruyere cheese )about 3 cups)
1. Slice 2 pounds onions (4 – 5 onions)
2. Melt 4 tablespoons butter in a large skillet.
3. Add sliced onions.
4. Sprinkle with 1 teaspoon sugar.
5. Cook over low heat stirring occasionally to prevent burning and sticking to pan.
6. Cook for 1 hour or until the onions are golden brown, soft and starting to caramelize.
7. Sprinkle 1 tablespoon flour over the cooked onions.
8. Add 2 teaspoons chopped fresh thyme or 3/4 teaspoon dried thyme. Stir about.
9. Add 4 cups beef stock to large stockpot. I use beef bouillon paste to make my beef stock.
10. Add the cooked onions to the beef stock and simmer 20 minutes.
11. Season with salt and pepper to taste.
While the soup is simmering:
12. Lightly toast 4 slices french or sourdough bread.
13. Place 4 oven-safe bowls on a baking pan and fill bowls with soup.
14. Place a slice of toasted bread on top of soup. The bread can be a whole slice or broken into large bits.
15. Sprinkle 1/2 cup grated cheese over the bread in each bowl.
16. Place soup under broiler until the cheese is melted and browned.
17. Watch closely … a lot can happen in a short amount of time!
