We have a lovely lemon tree growing right outside our kitchen window. The brightly colored lemons make me happy and I’m always on the lookout for delicious recipes. This vegan Lemon Poppy Seed Bread is the perfect recipe. It’s a delicious snack, as is. Or add icing for a delectable dessert.
Ingredients:
1 3/4 cups all purpose flour
1/4 teaspoon salt
1 teaspoon baking powder (I use aluminum-free Rumford)
3/4 cup butter, melted (I use vegan Earth Balance Sticks)
1 cup sugar
3 flax/chia eggs (or hen eggs if not vegan)
Juice of 1 lemon
Zest of 1/2 lemon
2 tablespoons poppy seeds
1/4 cup vegan sour cream (or regular if not vegan)
3/4 cup almond milk (or your preference of milk)
1 cup powdered sugar
2 tablespoons almond milk
Directions:
- Preheat your oven to 300 degrees.
- Use coconut oil to generously grease a 9 x 5 inch loaf pan.
- In a large bowl, whisk together flour, salt, and baking powder. Set aside.
- In another bowl, mix together the sugar and melted butter very well until fluffy.
- Add in eggs, mixing in between each. Add lemon juice, lemon zest, poppy seeds, and sour cream, mixing again just until combined.
- Next, slowly alternate adding the dry ingredients and the milk, mixing between each addition.
- Pour mixture into loaf pan and bake for 1 hour and 15 minutes.
- Allow the bread to cool before you add the glaze.
- To make glaze, combine 1 cup powdered sugar and 2 tbsp milk, whisk.
- Pour over bread.
