Hearty Vegan Chili
One of our all time favorite comfort foods is chili. No matter the weather… chili is delicious year round. Our Hearty Vegan Chili is quick and easy to make and a wonderful crowd pleaser. And it’s easy peasy to double or triple the recipe for more people! You can also spice it up by adding extra chili seasoning or spicy peppers.
When our kids were growing up, I always made a gallon of chili to take on our camping trips. Deliciously good memories!
Hearty Vegan Chili – Serves 4-6
Ingredients:
1 tablespoon Olive Oil or Coconut Oil
1 – 2 large organic chopped Onions
1 chopped organic Bell Pepper
1 – 2 cloves chopped Garlic Cloves
1 pound Vegan Meat Substitute – We use Trader Joe’s Beef-Less Ground Beef
2 15.2 oz cans organic Chili Beans
1 18oz jar organic Crushed Tomatoes
2 tablespoons Homemade Chili Seasoning
Sea Salt & Pepper to taste
Garnish:
Grated Vegan Cheese
Chopped Onion
Corn Chips
Directions:
- In a large pot, heat oil over medium-high.
- Add onions and garlic.
- Cook for several minutes stirring constantly until onion is translucent.
- Add Chili Beans and Crushed Tomatoes. Stir to mix.
- Add Homemade Chili Seasoning. Stir to mix.
- Season to taste with with salt and pepper.
- Simmer at lowest heat for 20 minutes.
Garnish with fresh chopped onions, grated vegan cheddar cheese or corn chips.
