I’ve had a yearning for fresh tomatoes and pasta for some time now but … NY doesn’t care for fresh tomatoes. But recently, while visiting with his Aunt and Uncle at their home, we enjoyed the most delicious fresh tomatoes and pasta dish. And guess what? NY loved it!
With a tweek here and and the tomatoes cooked a wee bit more, this is our variation of Fresh Tomatoes with Pasta. It really can be adapted to any type of pasta. And a vegetable broth could easily be substituted for the cream. Just use your imagination and follow your taste buds!
What you’ll need:
whole wheat pasta
1 – 2 tablespoons olive oil
10 – 12 cloves of fresh garlic
8 – 10 fresh tomatoes (I use roma tomatoes)
1 cup cream or half & half
Seasoning
Cook pasta as directed on package.
Add 1 – 2 tablespoons olive oil to a large skillet. I use my all time favorite electric skillet.
Using a garlic press, crush 10 – 12 fresh cloves of garlic.
Add the pressed garlic to the olive oil and saute on a low heat.
Saute the garlic in the olive oil until lightly browned.
Chop 8 – 10 tomatoes to desired size.
Add the chopped tomatoes to the garlic. Cook on low heat to desired tenderness.
Add approximately 1 cup of cream or half & half. to desired consistency. Season to taste.
After pasta is cooked to desired tenderness drain completely.
