Our grandkids went back-to-school a few weeks ago. Personally I’m not crazy about the new school year starting in the middle of summer. When our kids were young school started in September. The trees were turning different hues of color and the morning air was crisp. That’s back-to-school to me! But nevertheless, school has started and it’s time for a hearty, tummy filling, nutritious breakfast. This helps keep the kiddos going strong while learning new things and meeting new friends. This Blueberry Almond Oatmeal makes the perfect option for healthy vegan eaters. Oatmeal is really one of the most versatile and easy breakfast options for a busy family.
This recipe is a bit of a switch up from traditional cooked oatmeal. The oats are cooked just until softened with an addition of slivered almonds and fresh blueberries.
This recipe makes 1 cup which is perfect for David and me. When the grandkids are sleeping over I double the recipe.
- 1 cup organic oats
- 1/4 cup almond milk
- Sweeten to taste with organic honey, organic brown sugar or organic turbinado sugar
- 1/4 cup slivered almonds
- 1/4 cup fresh organic blueberries (frozen will do in a pinch)
Directions:
- Heat almond milk in a sauce pan over low heat.
- Mix in oats stirring well.
- Add your choice of sugar/honey to taste.
- Add in slivered almonds and blueberries. Serve while hot.
If anyone is on different schedule and eating at other times, simply reheat the oatmeal in the microwave. Most importantly of all …
