Baked Apples. Easy to make and good to eat. And yesterday we did eat.
An added bonus is the wonderful aroma that fills the air by the time they come out of the oven!
Ingredients:
4 Apples – I like the tartness of Granny Smith apples, but I think it’s a matter of preference.
1/2 cup brown sugar
1/4 cup chopped pecans
2 teaspoon cinnamon
2 tablesppon butter
Raisins, cranberries, walnuts, or what suits your fancy, can be added also.
Add 2 teaspoons cinnamon to 1/2 cup brown sugar.
I also added a dash of nutmeg.
Add 1/4 cup chopped pecans (or nut of choice) to the brown sugar mixture.
Toss the ingredients about to mix together.
Remove the apple cores. You can slice the bottom of the apples so that they sit evenly however I like the stuffing to stay put so I simply remove the core leaving the bottom intact.
Fill each apple with the brown sugar/cinnamon mixture.
Place a dab of butter atop each apple.
I decided to switch the apples into their own oven safe dishes at this point. Bake the apples for 30 – 40 minutes until tender but not too soft. The baking time also depends on which type of apple you use. Granny Smith apples take a bit longer than say a Gala apple.
By this time your house is going to smell absolutely incredible. Really! But don’t forget to remove the apples from the oven after 30 – 40 minutes.
After the apples cool just a bit, slice each one in half and give the center a taste. But only if you want a taste of heaven.
Drop a scoop of vanilla ice cream on top. A large dollop of good real whipped cream would do, too!
