Many years ago, at our annual Ornament Exchange party, my good friend Janna shared her Christmas Chicken recipe. Everyone at the gathering fell in love with the dish. I’m sure I’m not the only one who enjoyed gifting my family with the deliciousness from Janna’s kitchen. Over the years I’ve made it for all occasions. And thus, the name Chicken Enchilada Casserole evolved in my house. It’s especially easy to make for a crowd and is always satisfying and scrumptious!
Chicken Enchilada Casserole is a crowd pleaser! And it can be adapted to your family’s liking by simply adding some favorite ingredients of your own. (And the recipe is easy to double.)
Ingredients:
Cook your chicken as desired and dice into bite size pieces. Slice 1 bunch of green onions.
Add 1 can (4 oz) diced green chiles and 1 small jar of pimento to 2 cans of cream of chicken soup and stir it all together.
Add 1 ¾ cups Chicken Broth and 1 ½ cups Sour Cream to the soup mixture. Mix well.
Gather your chicken, grated cheese, soup mixture which is now your sauce and torn tortillas together. Now begin making your masterpiece!
You can grease your pan, but I often choose not to. Spread 1/3 of the tortillas in your pan.
Spread 1/3 of the chicken over the tortillas.
Spread 1/3 of the sauce (soup mixture) over the chicken.
Sprinkle the sauce layer with a bit of the grated cheese.
Repeat the tortilla layer.
And repeat the sauce layer.
Repeat the cheese layer.
Repeat the tortilla layer.
Repeat the chicken layer.
Repeat the sauce layer.
Whew!
You can also do two layers of all the ingredients by using 1/2 instead of 1/3 for each layer. That’s what I did this time in these photos.
Sprinkle with the remaining cheese.
Bake at 350 degrees for 35 to 45 minutes until it’s hot and bubbly. Remove from oven and place on a cooling rack. Let it stand for 10 minutes before serving.
Served here with sour cream and salsa. Or whatever your little heart desires.
