A few weeks ago we made a delicious Cream of Broccoli Soup. The recipe is easily adaptable so we decide to mix it up just a wee bit and make Cream of Cauliflower soup.

Ingredients:
1 large head of cauliflower
1 onion quartered and sliced
2 cups vegetable or chicken broth
1 clove of crushed garlic (or more if you really really like garlic)
1 cup cream, half & half or milk.
Seasoning to taste
Cook 1 onion quartered and sliced and 1 clove crushed garlic until tender.
Add 1 head cauliflower and 2 cups vegetable or chicken broth.
Simmer 15 – 20 minutes until cauliflower is cooked through. Drain 1 cup of the broth. Blend with hand blender or in blender to desired consistency.
Add 1 cup cream, half & half or milk to desired consistency.
Garnish with grated cheese, sliced green onions or anything that tickles your taste buds.
